Ingredients:
8 slices of white bread
Butter
Apricot jam
2 cups of pumpkin (1 butternut squash should do. Slice very thinly)
Salt
Sugar
Cinnamon

Method:
1. Butter the bread on both sides and spread apricot jam on the side facing up. Place one layer in an oven proof glass dish, jam facing up.
2. Cut the pumpkin thinly, season lightly with salt and place on top of the bread.
3. Mix the sugar and cinnamon together and sprinkle over the pumpkin.
4. Repeat this until all the pumpkin and bread is used up, finishing with a layer of pumpkin. Dot a few extra clots of butter on the top.
5. Bake for 45 minutes to an hour in a pre-heated oven of 180°C

Serve the pumpkin hot with vegetables and maybe a lovely chicken dish, maybe a pie? This is a great dish to try and impress your friends with. It is very easy to make, so try it and see what happens!

Okay, now I need to ask do you find yourself making the same meals over and over and over? It seems like I get in a rut and fix the same foods on a rotating scale. Granted I have picky eaters in my family but not that picky.

I decided to do something about it. After reflecting on it for awhile I discovered the biggest problem with cooking supper was deciding what to make so I got out a notebook and started writing down meal ideas complete with side dishes. I even asked friends and family occasionally what they were having for dinner to get more ideas.

I had my daughter give me ideas too for her favorite meal choices and side dishes. She did a good job of coming up with things I hadn’t even made in a long time. I found that asking her when she was hungry seemed to help her creative juices come up with more ideas.

Now each week I have my little notebook of meal ideas and I decide on 8 of them and go shopping for the ingredients to make them. I then make a list and put it on the board of the 8 different menu choices and cross them off as I make them.

At the end of the week there is always one meal left over, I often find I didn’t make it because someone doesn’t like it much or it takes too long to prepare. I then make a little note in my notebook saying cook this when so and so won’t be home, or only put this on the supper list when you know you have time to make it.

I find I don’t dread cooking supper nearly as much, I have eliminated the quick run to the grocery store before making supper, and have made my life much simpler when it comes to cooking supper.

Fish is a dish that always goes over well at dinner parties. Try a fish dish that is not common, such as halibut. The dinner party that earned me the best compliments was one at which I served a recipe called Snappy Halibut Skillet. Along with being easy to prepare, it is quite tasty. There are many variations of this recipe, but the one that my family and guests prefer is as follows. You will have to increase the recipe for the required number of guests. This one is based on a dinner party for 10 people.

Ingredients

1 1/2 tsp. Thyme
2 1/2 lb halibut (allowing 1/2 lb. per serving)
1 1/2 tbsp olive oil
1 onion chopped in small pieces
1 clove garlic, minced
1 1/2 tbsp cornstarch
1 can stewed tomatoes
1/2 cup green onions

Sprinkle thyme on both sides of each halibut fillet and cook over medium heat in hot oil. Test the fish to see if it flakes easily with a fork. This will tell you that it is fried. Remove the fish to a warming plate.

Using the same skillet, cook the garlic and onion until they are tender. Stir the cornstarch into the stewed tomatoes and then pour the mixture into the skillet. Cook until thickened. Return the fish to the skillet and let it heat through with the sauce.

Have you started hearing about the Raw Food Diet? It’s gaining popularity and buzz, not just as a diet to lose weight, but a diet for a long and healthy life. We eat so much in the way of processed food that we don’t even stop to think about what we’re putting into our bodies, and how far we’ve come nutritionally from our ancestral, agrarian roots.

A raw food diet means consuming food in its natural, unprocessed form. There are several common-sense rationales for why this is a good idea. Processing and cooking food can take so much of the basic nutritional value away. Think of some of the conventional wisdom you’ve heard about for years, such as: If you cook pasta just to the al dente (or medium) stage, it will have more calories, yes, but it will have more the nutritional value in it than if you cooked it to a well-done stage. Or you probably remember hearing not to peel carrots or potatoes too deeply, because most of the nutrients and values are just under the surface.

Another difference is the actual serving sizes, especially in the bread and grains group. A
diabetic has to monitor the carbohydrate intake at each meal and it has been found that
smaller portion sizes are a good way to manage this.

To quickly and easily check the temperature of the burgers, just remove the patties from the heat source when they are almost done and insert an instant-read food thermometer sideways into the centre of the thickest burger. If the temperature registers at least 71ºC (160ºF), the burger is done, if not, continue cooking until a minimum temperature of 71ºC (160ºF) is reached.
Health Canada also suggests that consumers do not eat hamburger patties that are pink or red in the middle, unless a food thermometer has been used to verify the proper temperature has been achieved. This is especially important for people most at risk for foodborne illness since E. coli O157:H7, a bacteria that can be present in ground beef, can lead to serious illness or even death. Those most at risk include young children, the elderly, pregnant women and people whose immune systems have been weakened by cancer, kidney disease and other chronic illnesses.

Trim and dice zucchini, and place in a medium bowl. Add julienne of red pepper, cucumber, red onion and chiles. Dress with olive oil, lime juice and salt, and toss to incorporate. Gently stir in cilantro and serve with yellow or blue tortilla chips, round slices of jicama, or thin slices of French bread. Makes 8 servings.

12 thin slices lean ham

Wrap a slice of ham around each spear and place on baking sheet lightly sprayed with oil. Sprinkle spears liberally with Jarlsberg and brown in 450° oven about 5 minutes. Serve immediately.

I just signed the lease on my very first apartment, and will be moving in next month. I got a pretty good deal on a truly fantastic place, and am very excited about everything right now! I figure the pots and pans will leave the biggest dent in my wallet because I plan on purchasing stainless steel cookware instead of the cheaper stuff. This might not seem like a sound decision for me to make, especially since money is tight right now. But I know that stainless steel cookware is tougher and lasts longer than coated aluminum products, so I will actually end up saving money. I would rather just buy one quality set now than have to go through two or three cheaper sets in the same time frame.

I’ve already started shopping for stainless steel cookware online, and have found that I have a lot of different options to choose from. For example, I can go with a basic cooking set that consists of just a few pieces or I can spring for a professional set that contains every type of pot and pan that I would ever need. In addition, I can choose from name-brand stainless steel cookware, or go with a relatively obscure manufacturer in order to save a few bucks.

Either way, there are plenty of websites that offer discount stainless steel cookware for both commercial and personal use. I’ve seen some incredibly good deals out there, and am sure that I’ll be able to find something to my liking. I might even be able to buy All-Clad stainless steel cookware, which most people agree is the absolute best on the market today. The regular retail price for All-Clad certainly reflects its elite status, but I’ve seen it listed for 75% off at some websites.

Anyway, I still have a month left to make my final decision on which set of stainless steel cookware I should buy, so I’m not in too much of a hurry here. For now, I’m just happy to have a better idea of what’s out there and how much money I’ll need to save up for my purchase.

I have been on the hunt for good slow cooker recipes for a long time, and I can’t seem to find anything that I like. I guess it is because I am very picky about what I like to eat, and many of the recipes that I come upon have something in them that I just can’t stomach. I am still searching though, and I hope to come up with at least ten of them that are really good and really easy to throw together. There are just days when I know I have a lot of work to do and I would rather spend my free time with my little girl than by cooking a meal.

Slow cooker recipes are everywhere, and you can find them with a simple search online. The most common type are recipes for stew, but they all seem to have the same ingredients. The problem that I have is that I do not like cooked onions, and if a recipe calls for them, I won’t make it. My husband thinks I’m being silly, but I just can’t eat them. I like them raw on a burger or hotdog, but I cannot stand to have them in slow cooker recipes. Unfortunately, this cuts down my options quite substantially.

You may not be as picky as I am, and if that is the case, you should have no problem finding slow cooker recipes that you will love to make for your family. For the most part, you simply add the ingredients to your cooker, turn it on and let it go all day. You shouldn’t even have to stir it. You can even find great slow cooker recipes in your local grocery store. They have kits that are already put together and you usually find them in the freezer section. All you have to do is dump the contents into your crock-pot and turn it on. It doesn’t get much easier than that.

I may end up having to find slow cooker recipes that I can alter. Though this might take some doing, I’m sure there is something I can do. I am not a chef, but I do know how to experiment, even if it means ordering pizza a few nights when a few of my creations have not worked out like I had hoped they did. In the mean time, I will continue to search for slow cooker recipes that might be able to be used, and perhaps try a few from the grocery store.

1 teaspoon vanilla

In medium bowl, stir together pancake mix, brown sugar, chocolate chips and salt. Add milk, egg, butter and vanilla. Stir with a whisk until blended. For each pancake, pour 2 tablespoons batter onto lightly greased and preheated 375°F griddle (medium heat). Cook 11/2 minutes per side, turning only once.

Snickerdoodle Cookie Pancakes

Prepare chocolate chip cookie pancakes as directed, substituting 1 teaspoon cinnamon for the chocolate chips. Serve pancakes with additional butter and sprinkle with cinnamon and sugar topping.

Oatmeal Cookie Pancakes

Prepare chocolate chip cookie pancakes as directed, substituting 3/4 cup rolled oats (quick or old-fashioned) for the chocolate chips and adding 2 teaspoons cinnamon.

Makes 16-18 slices

1 half of a 17.25-ounce package (1 sheet) frozen puff pastry, thawed

11/2 cups (6 ounces) shredded Swiss cheese

1/2 cup sour cream

1/4 cup thinly sliced green onion

1 cup (4 ounces) cooked shrimp, chopped, or 4.5 ounces canned shrimp, rinsed, drained and chopped

1 egg, beaten

On a lightly floured surface, roll the thawed puff pastry to a 10″ x 18″ rectangle.

Place rectangle of pastry on a lightly greased, large baking sheet.

In a medium-sized bowl, stir together cheese, sour cream, onion, shrimp and half the beaten egg (about 2 tablespoons).

Spread the mixture length-wise down half of the rectangle. Brush edges of pastry (using pastry brush) with some of the remaining beaten egg.

Carefully fold dough over the filling and seal edges with the tines of a fork. Brush top and sides of strudel with remaining egg.

When tender, turn into a colander and drain, and pour cold water through it to prevent the tubes from sticking together. Last year, U.S. consumers spent nearly $15 billion on food for their pets, according to the American Pet Products Manufacturers Association. Industry research shows that natural and organic pet food products are growing at 20 percent a year.

“The growth of natural products is making its way to the pet food aisle, as more and more responsible owners are making the same healthy food choices for their pets as they are for themselves,” said Warren Eckstein, an internationally known pet and animal expert and Purina One spokesman.

Purina One Natural Blends dog and cat food is made with high-quality, natural ingredients formulated to deliver a healthy difference in pets’ energy level, skin and coat, teeth, gums and digestion. The line features Chicken and Oat Meal and Lamb and Barley formulas for dogs and a Chicken and Oat Meal formula for cats. The ingredients are carefully selected for their nutrient content and steam-cooked at the start at an optimal time and temperature to help maintain vitamins, minerals and flavors, according to the manufacturer.

All include protein sources to help support strong muscles; whole grains for digestive health; and omega fatty acids from natural sources, including canola and soy oils for healthy skin and coat.

The national Fight BAC!® campaign’s upgraded on-line food safety information better serves educators and consumers seeking information to help reduce risk of foodborne illness.

“The Partnership’s website, www.fightbac.org, is widely utilized by consumers, educators, dietitians and public health officials across the United States,” says Shelley Feist, Executive Director of The Partnership for Food Safety Education. “Our goal is to make our materials fully accessible, knowing two-thirds of adults turn to the Internet for basic safe food handling information.”

Despite recent declines in outbreaks of several bacterial foodborne diseases, foodborne illness continues to afflict tens of millions of people each year. Experts agree that education on basic safe food handling is vital to reducing incidence. The Partnership’s national consumer study reveals that much progress has been made increasing awareness of safe food handling practices, but more work remains to be done.

“Our research shows a direct link between high awareness of safe food handling recommendations and actual proper food handling practices,” says Tim Hammonds, Chairman of the Partnership for Food Safety Education. “By improving our online offerings we hope to contribute to increased awareness of proper food handling, ultimately reducing risk of foodborne illness nationwide.”

Fully searchable, the new website is more user-friendly, providing important safe food handling recommendations at a glance and updated downloadable fact sheets, brochures and other materials for consumer and educator use.

The Fight BAC!® campaign empowers consumers with four simple safe food handling practices they can use to reduce their risk of becoming ill: Clean, Separate, Cook and Chill. BAC!, the campaign’s “bacteria mascot,” is the invisible enemy who tries his best to spread contamination wherever he goes.
